purees and new shoes

Yesterday I explored my new cookbook Dese.ptively Delici.ous by Jess.ica Sein.feld. Her theory is to puree veggies and fruits and hide them in everyday recipes. She says she has a constant struggle with her 3 kids when it comes to eating their vegetables. So she created the purees to hide the veggies and make dinner time more enjoyable. I had prepared ahead of time and bought a sweet potato, one squash, a bunch of broccoli, carrots, cauliflower, a bag of baby spinach, bananas and apples. I am determined to get this family of mine to eat healthier and lose some weight. So I baked the squash, steamed the spinach, sweet potato's and broccoli. I ended up with 2 - one half cup bags of squash puree, 1 - one half cup bag of spinach puree, 3 - one half cup bags of broccoli puree and 1 - one half cup bag of sweet potato puree.

It was surprisingly easy. I now wish I would have made my own baby food!

This cook book is brilliant I'm telling ya. After making all the purees (I still have to do the cauliflower, carrot, banana and apple) I decided to try my first recipe from the book. I made a batch of applesauce muffins (with 1/2 cup of squash puree). They turned out great, I took the batch to work today and they were a hit. Everyone is requesting that I bring the cookbook tomorrow so they can check it out.

What's left of them...
That is how I spent most of the day Sunday.

On Saturday my mom took my sister and I shopping. We had fun as we always do when mom takes us shopping. I got 4 of the cutest pairs of shoes and a black pair of pants. E got a few cute things too, but enough about her (j/k)... here are MY cute new shoes...

Is it just water and veggies to make the puree? I am glad you like the cookbook. I might have to try some of the ideas. I have a great recipe for zuchini chocolate cake made with applesauce instead of oil too. SZ

I don't even add water the the puree's unless they are really dry. I added a bit to the squash and that was it. It was really easy and thank you SZ I really LOVE the book!! It is probably my favorite x-mas gift!! shhhh...
